THE DOMAIN:                              The Pastouret Domain is located in the Costières de Nîmes district, its vines unfolding their rows along the hillside to the South. The vineyard is situated on the parish of Bellegarde, a large borough, along the RN 113 , 17 kms south of Nîmes in the direction of Arles .. The village, founded by the Romans who planted the first vine there, nestles at the foot of the vestiges of the famous XIIth century watch tower.

The Pastouret family established their estate as early as 1908 . The vineyard, now around thirty years old and extending over 30 hectares, has been planted in the former bed of the Rhône river. It is cultivated in a natural way, with stocks originating from the area : a majority of Syrah, then Grenache, Carignan, Clairette de Bellegarde.

THE SOIL: It turns out to be a perfect soil for quality vineyards . The land of the domain unquestionably benefits from a privileged location with its blond, red and white rolled pebbles, either flat or oblong, of the Agapan Gress type, which keep the earth buried below and so perfectly capture the rays of the sun and their warmth . Thanks to the exceptional sunshine basking such a superbly oriented hillside , that quaternary Rhodanian Gress proves to be the privileged favourite soil for the vine which draws all its virtues from it and returns them back into our wine.

 ORGANIC WINE:

Michel Pastouret has always shown great passion for nature and environment. In 1995 he and his wife Jeanne decided to give a personal touch to their production and to keep their vines in harmony with their environment. Respecting Dame Nature's rights and following the principles of organic agriculture, they gave up using chemicals, weed-killers and insecticides, thus allowing their wines to bear the "organic culture" stamp . Since they assumed the organic culture technical requirements, legalised in 1997, they have been granted the AB stamp by the CONI'ROLE ECOCERT AS F32 600. Ever since , Michel and Jeanne have been continuously watching over the production of this faultless quality required by the making of organic wines. It's a warrant .

Moreover, the Domain is an A.O.C.wine as a Costières de Nîmes .

 WINE MAKING:

In order to preserve the specific character of soil and vine , the grapes are processed with strict ancestral know-how. They are harvested, then separated from their stalks before they follow the traditional wine-making methods in the wine cellars of the Domain.

A continuous watch is kept over the natural process . Our wines receive no addition on top of their natural components - ( no sugar ... etc). The wine is made with a modern equipment agreed by the Health Standards of the European Union, in thermo--regulated vats in which it is macerating for 15 to 35 days, according to the variety of the grapes . Some wines would age for 1 to 2 years in casks before being bottled . The annual output varies between 100 to 200.000 bottles .
